Easy Chicken Pot Pie

While shopping for dinner in the "food storage," I've discovered that there are ways to eat up some of the tons of cans of veggies and soups without it being a dreadful experience. On the inside of a cream of chicken soup label I found a few meal ideas and I figured I'd at least try them.

Here's the Easy Chicken Pot Pie! The picture was taken from their website. I made ours a double batch in a 9 x 13 cake pan to be sure that there was enough for our family and my youngest Brother-In-Law who was having dinner with us that night. There was plenty, even for seconds and a lunch serving the next day!


1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (I also added a little bit of sour cream to make it just a bit creamier and to give it more sauce.)

1 package (9 ounces) frozen mixed vegetables, thawed (I used a 15 oz can of mixed veggies.)

1 cup cubed cooked chicken or turkey (I used a can of chicken.)

1/2 cup milk

1 egg

1 cup all-purpose baking mix

1.Heat the oven to 400°F. Stir the soup, vegetables and chicken in a 9-inch pie plate.
2.Stir the milk, egg and baking mix in a small bowl. Spread the batter over the chicken mixture.

3.Bake for 30 minutes or until the topping is golden brown.


Like I said earlier, the food turned out really good and it was surprisingly cheap to make. Besides that, everything to make it was hanging out in the basement. (Well, the milk and egg weren't but you know what I mean.) The biscuit top seems super runny and I was worried that it wasn't going to work. It puffed up and browned up to perfection in no time! James was so impressed that it was just Bisquick ("all purpose baking mix").

Eryn's Influence

I guess that Eryn was feeling a little creative yesterday because she dressed up and then dressed up her baby sister too. I found Brooke in a tutu with Eryn spraying her with hair spray in the bathroom. (For the record, I was just in the next room putting laundry in the washer while all of this occurred!)

Attitude? Check.


Mommy, HELP?

Eryn loves her puppy and Brooke is becoming more and more attached to this Dalmatian. Yes, another WHITE toy! What was I thinking letting her play with that in the first place?



Eryn was spinning and dancing with her pretty skirt on.

Then, Eryn got mad at Brooke because she wouldn't spin. The camera went away quickly as Eryn grabbed her by the tiny arms and started spinning her around! I almost had a heart attack! Brooke just laughed and seemed to like it. She is such a good natured little baby.

Sleeping or Sitting?



In case you weren't sure if Brooke is sleeping or sitting she is doing BOTH! She has this desire to not take naps and play all day, but gets so tired that she just falls asleep. She was sitting up in her crib and just leaned over totally asleep, even snoring! I didn't really know if I should move her or just leave her where she was. So, I took a picture and pose the question to my blog stalkers.
Should I move her when she falls asleep in strange positions (like sitting up) or not?

Blah

For those of you who might have missed out on my fun birthday, allow me to recap it for you!

After a horrible night's sleep I woke up to Eryn screaming and coughing and Brooke smelling in a way that no human should! Then, it was time to start the day.

I decided to go and run a few errands and then take a few pictures around town. I was going to go up north of my home and opted out of taking the freeway. I has this "feeling" that since I wasn't in a hurray that going through the smaller towns to get there would be just fine.

Our car DIED while I was driving just one tiny town north of our house! Thankfully, it died next to a bank which had restrooms for me to take care of the girls and wait for help. Thankfully, Mike works in rental cars! I had help in no time. Our car was towed back to our home town and repaired.

A friend of ours works at a parts department at a dealership and he was able to save us a good chuck of money on parts. Fuel pumps are not cheap!

Even with saving money on a rental car, a tow (because we were on the guy's way home), and parts we still had to trade Eryn to get our car back! Yes, those evil auto repair shops DO in fact accept first born children as payment for unheard of amounts. Ha ha ha... No, but seriously I got a fuel pump and someone to install it for my birthday. I really splurged on my birthday present this year!

With that terrible experience behind me we were ready to calm down for the evening and stay at home. One of my friends brought over a tub of ice cream and I almost cried. She knew that I needed something positive and sugar filled.

Easter Treats


With all of the excitement of Easter and Eryn's birthday I managed to forget about posting a picture of my cupcakes! I made these cupcakes to take to Mike's mission reunion. I figured that they would be appreciated for the looks and great taste by more than just me if I shared them with a large group. Sister Holbrook, Mike's "Mission Mom," was busy showering me with compliments and I just kicked back and ate it up! She was impressed that they were actually easy, but looked so nice. (Ahhhh, that's me. Nothing that's too complicated, but still manages to get attention! Ha ha.)
His old mission president and his wife both adored our girls and were very glad to see us again this year. There are more and more children attending each year and less and less missionaries, but that's to be expected. People move away and life goes on.
It was really interesting to see that even as one of the younger kids, Eryn was commanding the crowd around. They all followed her lead to run around, get into trouble, and even randomly run over and tell Mom or Dad, "I love you!" I didn't expect her to be the "Alpha Dog" of the group by any means. She's cute and charming, but I had no idea how charismatic she could be!

Girls at 9 Months


While comparing some pictures the other night, Mike and I found a few that made us really think that we have a clone of Eryn. Thankfully, Brooke's personality is WAY more MELLOW and she's a lot easier to deal with. Still, the physical resemblance seems more and more shocking as Brooke gets older!
I'd say it's time to play name that baby, but I realized that recent blog posts of Brooke give that game away far to easy. I even built in a code. Eryn = Pink and Brooke = Purple. Convinced that they're sisters?

Birthday Time Again

It was birthday time again at our house! Eryn was so excited to celebrate her happy birthday that I seriously considered having it early to get her to stop talking about it ALL the time! We did hold out until her birthday and had a few friends and family over to share cake and a few presents with. Eryn was probably the most excited for the cake. : )


I could hardly keep her away from it before people started coming over!

She practiced blowing out the unlit candles.

Then when it was time to do it for real, she only got 2 out of 3.


Brooke really wanted cake too. Uncle Chance probably slipped her some.

Oh, ok there was stuff inside it!

Brooke found a present that sang and danced. We've had mini wars over the dancing bunny. Thank you Uncle D for their favorite toy of all time!

Eryn was soooooooooo excited for Snow White! If you think the picture is great you should have heard the squeal that went with the face. Thanks Grandma Crawford you hit a home run!

Brooke also enjoyed playing with the wrapping paper.
Eryn had a wonderful birthday and was able to have lots of presents that she loved and was able to spend the day with her family and friends that she loves even more! Thanks to all for the phone calls, cards, and great memories of the day.
I couldn't write up this whole blog without mentioning the funniest part of the whole day. Eryn was playing with Grandpa Mak and told him to make a grumpy face. (Probably Snow White related, I'm guessing.) Then, he made a mean scowl and Eryn says, "That's a Grandma face!"
We all got a great laugh out of that. Except Grandma. She was making that mean face and we all knew why! Poor Grandma, the butt of yet another joke. Eryn's been playing with the singing book for the last few days and saying how much she loves Grandma. Too bad that Grandma can't hear or see that to know that Eryn really does love her!
